- 3 ripe bananas, mashed
- 1/2 cup (1 stick) unsalted butter, melted
- 3/4 cup granulated sugar
- 1 egg
- 1 tsp vanilla extract
- 1 cup all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
Cinnamon Sugar Topping:
- 2 tbsp granulated sugar
- 1 tsp ground cinnamon
Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper.
In a large mixing bowl, mash the ripe bananas until smooth.
Add the melted butter, sugar, one egg, and vanilla extract to the mashed bananas. Mix until well combined.
In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon. Slowly add the dry ingredients to the wet mixture and mix until well combined - do not overmix.
In a small bowl, whisk together the granulated sugar and cinnamon for the topping.
Pour the batter into the prepared loaf pan. Sprinkle the cinnamon sugar mixture evenly over the top.
Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
Let the banana bread cool in the pan for 10-15 minutes, then turn it out onto a wire rack to cool completely before slicing.
