Ingredients
  

  • 3 ripe bananas, mashed
  • 1/2 cup (1 stick) unsalted butter, melted
  • 3/4 cup granulated sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt

Cinnamon Sugar Topping:

  • 2 tbsp granulated sugar
  • 1 tsp ground cinnamon

Instructions
 

  • Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper.
  • In a large mixing bowl, mash the ripe bananas until smooth.
  • Add the melted butter, sugar, one egg, and vanilla extract to the mashed bananas. Mix until well combined.
  • In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon. Slowly add the dry ingredients to the wet mixture and mix until well combined - do not overmix.
  • In a small bowl, whisk together the granulated sugar and cinnamon for the topping.
  • Pour the batter into the prepared loaf pan. Sprinkle the cinnamon sugar mixture evenly over the top.
  • Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  • Let the banana bread cool in the pan for 10-15 minutes, then turn it out onto a wire rack to cool completely before slicing.
