  • Sharp knife
  • Small mixing bowl
  • Spatula or butter knife

Ingredients
  

  • 1 large English cucumber
  • 6 oz smoked salmon (thinly sliced)
  • 4 oz cream cheese (softened)
  • 1 tbsp lemon juice
  • 1 tbsp chopped fresh dill
  • Salt and pepper to taste

Instructions
 

  • Prepare cucumber - using vegetable peeling equipment or mandolin, cut cucumber into a thin ribbon in length.
  • Prepare the fillings - in a small bowl, mix the cream thing with a little lemon juice, fresh dill, salt and pepper as per taste.
  • Assemble the roll - keep the cucumber pieces leveled. Spread a thin layer of cream cheese mixture above. Keep a small strip of smoked salmon on top of it.
  • Roll it - turn the cucumber pieces gently from one tip to the other so that the spiral size becomes. Protect from toothpick when needed.
  • Serve and decorate - keep the roll in the plate. Decorate with fresh dill or lemon juice. Serve immediately or cool until ready to serve.
