Ingredients for Kerala-Style Egg Curry Recipe

  • 4–5 boiled eggs
  • 1 finely chopped onion
  • 1 tablespoon ginger-garlic paste
  • 2 tomatoes or tomato puree
  • 2 tablespoons oil
  • ½ teaspoon red chilli powder
  • ½ teaspoon black pepper
  • ½ teaspoon turmeric powder
  • ½ teaspoon garam masala
  • Salt to taste

A few basic and necessary ingredients are needed to make this dish: One tablespoon of ginger-garlic paste, two tomatoes or tomato puree, four to five boiled eggs, and two tablespoons of oil. Add half a teaspoon of each of the following: garam masala, black pepper, turmeric, and red chilli. For a creamy texture, add a small amount of coconut milk and season with salt to taste. The aroma is enhanced and the flavour is authentically Keralan, thanks to the fresh curry leaves.

Masala Base & Cooking Eggs Curry

  • Heat oil in a pan and add finely chopped onions and fry on medium flame till they become soft and translucent. This will add a mild sweetness and aroma to the base.
  • Now add ginger-garlic paste and fry it vigorously till the raw smell goes away and it turns golden-aromatic, this will deepen the flavour of the curry.
  • Add chopped tomatoes (or tomato puree) and cook until the tomatoes soften and oil begins to separate from the masala – this indicates that the masala is cooked well.
  • Now add red chilli powder, turmeric, black pepper, garam masala and salt, mix well and fry the spices for about a minute so that the aroma of the spices comes out clearly.
  • Add a little water or chicken/veg broth to the spices and bring it to a boil, then reduce the flame and cook the spices for a while so that the gravy gets cooked well and the flavour deepens.
  • Poke small holes in the boiled eggs to allow the spices to penetrate. Gently dip the eggs into the masala mixture and coat them with the spicy mixture. If desired, you can add a little coconut or milk to thicken the gravy. Cover the curry and simmer for 5-7 minutes, allowing the eggs to absorb the flavours and the gravy to thicken.
